In a bowl, massage kale with extra virgin olive oil. Add sliced cucumbers, beets, and kraut to the kale. In a separate bowl, combine chickpeas (which have been roasted in beet juice) with shredded chicken. Toss the chicken and chickpeas with @yaisthai coconut Thai curry. Combine all ingredients in a salad bowl and mix well.
